Curried Salmon Rolls Recipes

Ingredients :

440 g canned salmon, drained, bones and skin removed, flesh flaked

125g grated tasty cheese (mature Cheddar)

3 gherkins, chopped

2 tbsp mayonnaise

1 tbsp fruit chutney

4 spring onions, chopped

2 tsp curry powder

freshly curry powder

1 loaf sliced white bread

60 g butter, melted

Method :
  1. Place salmon, cheese, gherkins, mayonnaise, chutney, spring onions, curry powder and black pepper to taste in a bowl and mix to combine.
  2. Trim crusts from twenty bread slices and, using a rolling pin, slightly flatten each slice.
  3. Spread each slice of bread with salmon mixture, roll up and secure with a toothpick.
  4. Place rolls on a lightly greased baking tray, brush with melted butter and bake for 15 minutes or until golden and heated through.

Makes 20

These rolls are also delicious made with canned tuna or cooked chicken in place of the salmon.

180oC, 350oF, Gas 4
