2 tbsp
finely chopped mixed fresh herbs, plus some extra to garnish
Method :
Keep back about a quarter of all the fresh
vegetables, except the green chili, and place all the remaining
ingredients in a food processor and season to taste.
Process finely and chill in the refrigerator.
Chop all the remaining vegetables, and serve in a
separate bowl to sprinkle over the soup.
Crush some ice cubes and add to the center of
each bowl and garnish with fresh herbs.
Serve with bread rolls.
Gazpacho is a lovely soup set off perfectly by the
addition of a few herbs.
