Pasta With Sorrel and Cheese Sauce Recipes

Ingredients :

450 g freshly cooked pasta

120 g sorrel

280 ml chicken or vegetable stock

15 ml butter or margarine

15 ml flour

120 ml heavy or double cream

60 g grated mild cheese

salt and pepper

pinch cayenne pepper

2 hard boiled eggs, roughly chopped

grated Parmesan cheese

Method :
  1. Discard any thick stems of the sorrel.
  2. Cook the leaves in the stock for 4 minutes.
  3. Melt the butter and stir in the flour in a medium saucepan.
  4. Purée the sorrel in its stock in a blender or food processor and pour into the saucepan.
  5. Bring to the boil, stirring constantly.
  6. When thickened, stir in cream, salt, grated mild cheese, pepper, cayenne pepper and carefully stir in the eggs.
  7. Heat the sauce through gently.
  8. Pour over pasta and toss with Parmesan cheese to serve.

Serves 4 - 6
