Pilau Rice Recipes

Ingredients :

225 g basmati rice or long grain rice

30 ml oil

1 onion, finely chopped

10 ml cassia bark

3 cloves

1 bay leaf, crumbled if dry or snipped into thin strips if fresh

4 crushed green cardamom pods

570 ml water or stock

salt and pepper

60 g roasted, unsalted cashews

60 g raisins

Method :
  1. Wash rice until the water runs almost clear.
  2. Leave to drain for 30 minutes.
  3. Heat oil and cook onion until soft but not colored.
  4. Add the rice, cassia bark, cloves bay leaf and cardamom.
  5. Stir over moderate heat 2 minutes or until the rice begins to look opaque.
  6. Add salt and pepper and pour on the water or stock.
  7. Cover the pan tightly and cook over low heat for 10 minutes.
  8. Add the cashews and raisins and more liquid if the rice is dry.
  9. Cook, covered, a further 10 minutes or until the rice is tender and the liquid absorbed.
  10. Fluff with a fork before serving.

Serves 4 - 6
