Smoked Haddock Pate Recipes

Ingredients :

12 oz

2 oz

5 fl oz

2 tbsp

1 tsp

smoked haddock

butter

double cream

lemon juice

Worcestershire sauce

black pepper

lemon slices

chopped fresh herbs, to garnish

Method :
  1. Place the fish in a shallow pan and cover with boiling water.
  2. Cover and simmer for 10 minutes.
  3. Drain the fish , then remove the skin and flake the fish.
  4. Melt the butter, pour it over the fish and mix well.
  5. Mash the fish, then rub it through a sieve, or puree in a blender of food processor.
  6. Whip the cream until it is fluffy.
  7. Fold in the fish, then add the lemon juice and Worcestershire sauce.
  8. Season to taste with black pepper.
  9. Pour the mixture into a large round serving dish and chill in the refrigerator.
  10. Serve garnished with slices of lemon and chopped herbs.
