Spaghetti alla Genovese Recipes

Ingredients :

450 g freshly cooked spaghetti

30 g fresh basil leaves

15 g fresh parsley

1 clove garlic, crushed

60 g pine nuts or chopped walnuts

60 g grated Parmesan cheese

140 ml olive oil

salt and pepper

Method :
  1. Combine basil, parsley, garlic, nuts, cheese, salt and pepper in a food processor or blender and work until finely chopped.
  2. With the machine running, pour the oil through the funnel in a thin, steady steam.
  3. Process until smooth and the consistency of mayonnaise.
  4. Pour over the pasta and toss to serve.
  5. Serve with additional grated cheese if desired.
