Ingredients :

For the garnish :

60 g

long grain rice

oil

chopped spring onions

chicken stock

tomatoes, skinned and diced

peas, shelled

cardamom pods

cumin seeds

coriander seeds

cayenne

whole cloves

black peppercorns

salt

bay leaves

 

flaked almonds

chopped coriander leaves

Method :
  1. Wash the rice and soak it in water for 30 minutes.
  2. Drain the rice and heat the oil in a wok or a large pan.
  3. Add the spring onions and stir fry for a minute.
  4. Add the rice and coat all over with the oil.
  5. Now add the stock, tomatoes, peas, spices and bay leaves.
  6. Stir well and, when the stock comes to the boil, stir again, then cover and leave to cook on the lowest heat for an hour.
  7. Fluff up the rice and garnish with almonds and coriander leaves.
