cornflour or cornstarch mixed with 30 ml or 2 tbsp cider

Calvados (optional)

Method :
Melt butter or margarine in a
frying pan. Brown 2 ham steaks at a time on
both sides. Remove the ham and keep warm. Deglaze the pan with the cider,
reserving 30 ml or 2 tbsp to mix with cornflour or cornstarch. Add the raisins and cook about 5
minutes. Add the spices and salt and stir
in the corn flour or cornstarch mixture. Bring to the boil and cook until
thickened. Add Calvados to the hot sauce and
pour over the ham to serve. Garnish with coriander leaves.
