Ingredients :

black peppercorns

coriander seeds

allspice berries

dark brown sugar

onion, chopped

carrot, chopped

bouquet garni

white wine

whole cloves

juice and zest of 1 orange

Method :
  1. Grind salt, saltpeter, peppercorns, coriander and allspice together, then mix in the sugar.
  2. Prick the pork all over with a sterilized carving fork.
  3. Rub the spice and salt into the pork.
  4. Put it into a sterilized dish the same size as the leg.
  5. Cover with a sterilized lid and leave in the refrigerator for 8 days.
  6. Bring it out every day and rub it with the spice and salt.
  7. The salt gradually draws moisture from the pork, so soon you will have juice to rub over the pork.
  8. After 8 days, rinse and dry the pork thoroughly.
  9. In order to get rid of some of the salt, the pork into a saucepan of cold water and bring to the boil.
  10. Pour the water out and repeat the process.
  11. In a baking dish just a little bigger than the pork, lay down the onion, carrot, bouquet garni and orange zest.
  12. Place the pork on top and stud with the cloves.
  13. Pour the wine and orange juice over it.
  14. Cover with a lid or two layers of foil and put it into a preheated oven (160C/325F/Gas 3) for 3 hours.
  15. Remove from the heat and keep covered while the ham cools down.
