Method :
- Grind salt, saltpeter,
peppercorns, coriander and allspice together, then mix in the sugar.
- Prick the pork all over with a
sterilized carving fork.
- Rub the spice and salt into the
pork.
- Put it into a sterilized dish the
same size as the leg.
- Cover with a sterilized lid and
leave in the refrigerator for 8 days.
- Bring it out every day and rub it
with the spice and salt.
- The salt gradually draws moisture
from the pork, so soon you will have juice to rub over the pork.
- After 8 days, rinse and dry the
pork thoroughly.
- In order to get rid of some of the
salt, the pork into a saucepan of cold water and bring to the boil.
- Pour the water out and repeat the
process.
- In a baking dish just a little
bigger than the pork, lay down the onion, carrot, bouquet garni and
orange zest.
- Place the pork on top and stud with the cloves.
- Pour the wine and orange juice over it.
- Cover with a lid or two layers of foil and put it into a preheated oven (160C/325F/Gas 3) for 3 hours.
- Remove from the heat and keep covered while the ham cools down.
