Tunisian Beef Stew With Okra Recipes

Ingredients :

60 ml olive oil

900 g braising steak or chuck steak, cut into 5 cm or 2" pieces

2 onions, sliced

15 ml cumin

10 ml paprika

4 cloves garlic, chopped

675 g fresh tomatoes, peeled, seeded and chopped or the same quantity canned tomatoes, drained and broken up

430 ml stock or water

1 bay leaf

15 ml chopped parsley or fresh coriander

120 g okra, stems trimmed

salt and pepper

Method :
  1. Heat the oil in a large heavy based saucepan or heat proof casserole.
  2. Add the steak pieces in one layer and cook over a high heat to brown on all sides.
  3. Brown in several batches, about 6 minutes per batch.
  4. Remove the meat and lower the heat.
  5. Add the onions and cook to brown lightly and soften.
  6. Add the spices and garlic and cook 2 minutes on gentle heat.
  7. Add tomatoes, stock or water, bay leaf, parsley or coriander, salt and pepper.
  8. Bring to the boil, and then cover and simmer for 2 hours, stirring occasionally.
  9. Uncover, add the okra and simmer for 15 minutes.
  10. The okra will help to thicken the cooking liquid.
  11. Remove the bay leaf and serve with rice or couscous.

Serves 4 - 6
