braising steak or chuck steak, cut into 5 cm or 2" pieces
2 onions,
sliced

cumin
10 ml
paprika
4 cloves
garlic, chopped
675 g
fresh tomatoes, peeled, seeded and chopped or the same quantity canned
tomatoes, drained and broken up
430 ml
stock or water
1 bay leaf
15 ml
chopped parsley or fresh coriander
120 g
okra, stems trimmed
salt and
pepper |
Method :
- Heat the oil in a large heavy
based saucepan or heat proof casserole.
- Add the steak pieces in one layer
and cook over a high heat to brown on all sides.
- Brown in several batches, about 6
minutes per batch.
- Remove the meat and lower the
heat.
- Add the onions and cook to brown
lightly and soften.
- Add the spices and garlic and cook
2 minutes on gentle heat.
- Add tomatoes, stock or water, bay
leaf, parsley or coriander, salt and pepper.
- Bring to the boil, and then cover
and simmer for 2 hours, stirring occasionally.
- Uncover, add the okra and simmer
for 15 minutes.
- The okra will help to thicken the
cooking liquid.
- Remove the bay leaf and serve with
rice or couscous.
