Turkey With Apples, Bay and Madeira Recipes

Ingredients :

1 1/2 lb turkey breast fillets, cut into 3/4" slices

salt and pepper

4 tbsp unsalted butter, plus another 1 tbsp for the sliced apple garnish

4 tart apples, peeled and sliced

4 tbsp Madeira or cooking sherry, plus another 2 tbsp for the apple garnish

2/3 cup chicken stock

3 bay leaves

2 tsp cornstarch

2/3 cup heavy cream

Method :
  1. Season the turkey, melt 2 tbsp of the butter in a pan and fry the meat to seal it.
  2. Transfer to an ovenproof casserole.
  3. Preheat the oven to 350F.
  4. Add the remaining 2 tbsp butter to the pan with two sliced apples, and cook gently for 1-2 minutes.
  5. Add the Madeira, stock and bay leaves to the turkey and stir in.
  6. Simmer for another couple of minutes.
  7. Cover the casserole and bake for about 40 minutes.
  8. Blend the cornstarch with a little of the cream, then add the rest of the cream.
  9. Add this mixture to the casserole and return to the oven for 10 minutes to allow the sauce to thicken.
  10. To make the garnish, melt 1 tbsp butter in a pan and gently fry the apple slices.
  11. Add the remaining Madeira and set it alight.
  12. Once the flames have died down continue to fry the apple until it is lightly browned and garnish the casserole with it.

This casserole will win you many compliments with out the worry of a complicated menu. The unusual apple garnish looks very attractive.
