Cinnamon Pears In Brandy Recipes

Ingredients :

8 small pears, peeled, halved and cored with stems left intact

3 tbsp lemon juice

1 cup sugar

375 ml water

1 cinnamon stick, broken into pieces

2 tsp finely grated lemon rind

750 ml brandy

Method :
  1. Place pear in a large bowl, pour over lemon juice and just enough water to cover pears.
  2. Place sugar and 375 ml water in a large heavy based saucepan and cook over a low heat, stirring, until sugar dissolves.
  3. Bring to the boil without stirring.
  4. Add cinnamon stick and lemon rind.
  5. Drain pears, add to pan and cook over a low heat for 10-15 minutes or until peas are just tender.
  6. Arrange pears in hot sterilized jars.
  7. Stir brandy into sugar syrup and pour over pears to completely cover, then seal.
  8. Label when cold and store in a cool dark place for at least 4 weeks before using.

Makes 2 x 1.5 kg
