Warm Chicken Salad With Sesame and Coriander Dressing Recipes

Ingredients :

4 medium chicken breasts, boned and skinned

8 oz snow peas

2 heads decorative lettuce such as lollo rosso or oak leaf

3 carrots, peeled and cut into small matchsticks

6 oz button mushrooms, sliced

6 rashers of bacon, fried and chopped

Dressing

1/2 cup lemon juice

2 tbsp whole grain mustard

1 cup olive oil

1/3 cup sesame oil

1 tsp coriander seeds, crushed

1 tbsp fresh coriander leaves chopped, to garnish

Method :

  1. Mix all the dressing ingredients in a bowl.

  2. Place the chicken breasts in a shallow dish and pour on half the dressing.

  3. Refrigerate overnight, and store the remaining dressing here.

  4. Cook the snow peas for 2 minutes in boiling water, then cool under running cold water to stop them cooking any further.

  5. Tear the lettuces into small pieces and mix all the other salad ingredients and the bacon together.

  6. Arrange all these in individual serving dishes.

  7. Grill the chicken breasts until cooked through, then slice them on the diagonal into quite thin pieces.

  8. Divide between the bowls of salad, and add some dressing to each dish.

  9. Combine quickly and scatter some fresh coriander over each bowl.

This salad need to be served warm to male the most of the wonderful sesame and coriander flavorings. It makes a simple starter or a delicious light lunch dish.
