Fried Sausage 'Dumplings' Recipes

Ingredients :

225 g pork sausage meat

50 g cashews, lightly toasted, fairly finely chopped

1 tbsp finely chopped parsley

1 grade 2 egg

2 tsp milk

40 g fine dry breadcrumbs, lightly toasted

1/2 tsp salt

1/2 tsp onion or garlic salt

1/2 tsp paprika

deep fat or oil for frying

Method :
  1. Knead together sausage meat, cashews and parsley.
  2. With damp hands, shape into 16 miniature dumplings.
  3. Coat in egg, well beaten with the milk.
  4. On a sheet of greaseproof paper or piece of foil, mix together the crumbs, salt, onion or garlic salt and paprika.
  5. Add dumplings and coat all over with breadcrumb mixture.
  6. Leave to stand half hour for coating to settle.
  7. Fry in deep hot fat or oil until golden brown and crisp.
  8. Remove from pan and drain on crumpled kitchen paper.
  9. Spear and cocktail stick into each and serve hot.

Makes 16

Simply made party snacks, ideal with hot punch and sparkling cider.
