Liver Sausage Nut Diamonds Recipes

Ingredients :

225 g plain flour

1/2 tsp salt

1/2 tsp powder mustard

140 g butter

1 egg yolk

3 tbsp cold water

125 g fairly soft liver sausage

50 g flaked almonds, lightly toasted

egg white for brushing

poppy or sesame seeds

Method :
  1. Sift flour, salt and mustard into bowl.
  2. Rub in butter or margarine finely.
  3. Using a fork, mix to a fairly stiff pastry with egg yolk and water.
  4. Divide into 2 pieces and roll each into a 9 by 10" rectangle.
  5. Place one rectangle on to a lightly greased baking tray.
  6. Spread with sausage, taking it right to edges.
  7. Sprinkle evenly with almonds.
  8. Cover with second portion of pastry and press down lightly with a rolling pin.
  9. Brush with lightly beaten egg white then dust with the poppy or sesame seeds.
  10. Bake 20 minutes in oven, 400F, Gas 6.
  11. Cut into diamonds, remove from tray and arrange on a plate lined with a d'oyley or paper serviette.

Makes 26 - 30

Another delicious snack for any time of year. Serve the Diamonds straight from the oven with cups of hot coffee or keep them for drinks parties, especially those that run from morning till night during the Christmas festivities !
