Baked Mussels with Parmesan and Garlic Recipes

Ingredients :

3.5lb mussels, scrubbed and debearded

1 bouquet garni

125ml water

125ml dry white wine

2 tbsp finely chopped shallot

1 garlic clove, crushed

2 tbsp chopped parsley

75g fresh breadcrumbs

3 tbsp grated Parmesan cheese

25g butter

salt and pepper

Method :
  1. Put the mussels into a deep saucepan with the bouquet garni and salt and pepper.
  2. Add the water and wine, cover, cook over moderate heat, shake pan occasionally, until mussels open.
  3. Discard those that do not open, then strain them and reserve the cooking liquid.
  4. Remove and discard the empty half of each mussel shell and arrange the remaining shells close together, mussel side up, in a shallow ovenproof dish.
  5. Sprinkle the mussels with the chopped shallot, garlic, parsley, breadcrumbs and Parmesan.
  6. Put the reserved cooking liquid into a saucepan and bring to boil.
  7. Boil rapidly until reduced to half its original volume.
  8. Pour the reduced liquid around the mussels and dot with butter.
  9. Bake in oven, 350F, gar mask 4, 15 minutes.
  10. Ready to serve
