Grilled or Broiled Herring With Dill and Mustard Recipes

Ingredients :

60 ml chopped fresh dill

90 ml mild Swedish mustard

30 ml lemon juice or white wine

4-8 fresh herring, cleaned but heads and tails left on

30 ml butter or margarine, melted

salt and pepper

lemon wedges, garnish

whole sprigs of fresh dill, garnish

Method :
  1. Mix the dill, mustard and lemon juice or white wine together well.
  2. Cut three slits just through the skin on the sides of each fish.
  3. Spread half of the mustard mixture over each fish, pushing some of the mixture into each cut.
  4. Spoon over some of the melted butter and grill or broil the fish on one side for 5-6 minutes.
  5. Turn the fish over and spread the remaining mustard dill mixture onto the fish and spoon over the remaining melted butter.
  6. Grill or broil a further 5-6 minutes, or until the fish is cooked.
  7. Sprinkle the fish with salt and pepper before serving and arrange on a serving dish with the fresh dill and lemon wedges.

Serves 4 - 6
