Prawn (Shrimp) Toasts with Ham and Sesame Seeds Recipes
Ingredients :
1 tsp dry sherry
1 tsp salt
1 egg white
1 tsp cornflour
500g cooked peeled prawns, deveined and
finely chopped
7 slices of white bread from a large
sliced loaf, with the crusts removed
2 tbsp sesame seeds
2 tbsp chopped cooked ham
oil, for deep-frying
parsley sprigs, to garnish
Method :
Place the sherry, salt, egg white
and cornflour in a bowl and mix until smooth.
Stir in the prawns.
Divide this mixture between the
bread slices, sprinkle with the sesame seeds and ham and press the
topping firmly into the bread, using the back of a spoon.
Heat the oil to 350-375F or until
a cube of bread browns in 30 seconds.
Deep-fry the toasts, a few at a
time, with the prawn side down.
When the edges of the bread turn
golden, turn on to the other side.
Fry until golden brown.
Drain on absorbent kitchen paper
and cut each slice of bred into 4 squares.
Arrange on a serving plate,
garnish with parsley and serve hot.
