Prawns or Shrimp With Red Pepper Sauce Recipes

Ingredients :

675 g peeled king prawns or jumbo shrimp

140 ml white wine

3 black peppercorns

1 small bay leaf

Sauce :

60 g butter or margarine

1 large or 2 small red peppers, seeded and chopped

1 to 2 red chili peppers, seeded and chopped

5 ml ground coriander

60 g ground blanched almonds

60 g desiccated coconut

juice of 1 lime

45 ml natural yoghurt

4 spring or green onions, sliced

Method :
  1. Place the prawns or shrimp, water, wine, peppercorns and bay leaf in a shallow pan.
  2. Bring almost to the boil and cover the pan tightly.
  3. Leave to stand for 10 minutes.
  4. Prawns or shrimp should cook in the heat of the liquid.
  5. Melt the butter or margarine in a saucepan, add the red pepper, chili pepper, and coriander.
  6. Cook slowly until the peppers are very soft.
  7. Pour into a food processor or blender and add the almonds, coconut and lime juice.
  8. Strain off the cooking liquid from the prawns or shrimp.
  9. Process until smooth.
  10. Reheat the sauce and stir in the yoghurt.
  11. Pour over the prawns or shrimp.
  12. Process until smooth.
  13. Reheat the sauce and stir in the yoghurt.
  14. Pour over the prawns and sprinkle on the spring or green onions.
  15. Serve with rice.
