Seafood Kebabs Recipes

Ingredients :

8 mussels, removed from shells

1 large white fish fillet, cut into 8 x 2cm

8 large uncooked prawns, shelled and deveined, tails left intact

8 scallops

1 salmon fillet, cut into 8 x 2 cm

Chili Lime Glaze :

60 ml olive oil

2 fresh red chilies, seeded and finely chopped

1 clove garlic, crushed

60 ml lime juice

Method :
  1. Thread a mussel, a piece of white fish, a shrimp, a scallop and a piece of salmon on to an oiled skewer.
  2. Repeat with remaining seafood to make eight skewers.
  3. To make glaze, place oil, chilies, garlic and lime juice in a small bowl and mix to combine.
  4. Brush kebabs with glaze and cook on a lightly oiled, preheated barbecue, turning frequently and brushing with remaining glaze, for 4-5 minutes or until seafood changes color and is cooked through.
  5. Serve.
