Seviche Recipes

Ingredients :

450 g cod fillets

juice and grated rind of 2 limes

1 shallot, chopped

1 green chili pepper

1 tsp crushed coriander seeds

1 small green pepper

1 small sweet red pepper

15 ml chopped parsley

15 ml chopped fresh coriander

4 spring or green onions, chopped

30 ml olive oil

salt and pepper

1 small lettuce

Method :
  1. Skin the cod fillets and cut into thin strips across the grain.
  2. Put into a bowl and pour over the lime juice and the rind.
  3. Add the shallot, chili pepper, crushed coriander seeds and cover the bowl.
  4. Leave in the refrigerator for 24 hours, stirring occasionally.
  5. When ready to serve, slice the peppers and spring or green onions.
  6. Drain the fish and stir in the oil.
  7. Add the peppers and herbs and toss.
  8. Shred the lettuce and arrange on serving plates.
  9. Top with seviche to serve.
