Ingredients :
4 large sheets filo pastry
75 g butter
16 large tiger shrimp, cooked and shelled
1 tbsp chopped fresh mint, plus a little more to garnish
1 tbsp chopped fresh dill
juice of 1 lime, plus another lime cut into wedges
Keep the sheets of filo pastry covered with a dry, clean cloth to keep them moist.
Cut one sheet of filo pastry in half widthwise and brush both halves with melted butter.
Place one half on top of the other.
Preheat the oven to 450F.
Cut eight of the tiger shrimp in half down the back of the shrimp and remove any black parts.
Place four shrimps in the center of the filo pastry and sprinkle a quarter of the mint, dill and lime juice over the top.
Fold over the sides, brush with butter and roll up to make a bundle.
Repeat with the other ingredients and place the bundles join side down, on a greased cookie sheet.
Bake for 10 minutes or until golden.
Serve with lime wedges, tiger shrimp and mint.
Another wonderful combination - the mint, dill and lime blend together to make a magical concoction that will delight everyone who tries it.
