Curried Vegetable Pancakes Recipes

Ingredients :

200 g pumpkin, grated

2 large potatoes, grated

1 onion, grated

125 g sour cream

125 ml milk

45 g flour

2 tsp curry powder

2 eggs, lightly beaten

vegetable oil for shallow frying

Method :
  1. Place pumpkin, potatoes and onion in a colander and set over a bowl to drain.
  2. Squeeze to remove as much excess moisture as possible.
  3. Place vegetables, sour cream, milk, flour, curry powder and eggs in a bowl and mix well to combine.
  4. Heat oil in a large frying pan.
  5. Drop tbsp of vegetable mixture into the hot oil and cook for 2-3 minutes each side or until golden.
  6. Drain on absorbent kitchen paper and serve immediately.

Serves 4 - 6
