Pickled Ginger Recipes

Ingredients :

125 g peeled fresh ginger, cut into thin slices

125 ml rice vinegar

2 tbsp honey

Method :
  1. Place ginger in a bowl.
  2. Pour over boiling water to cover and stand for 1 minute.
  3. Drain and set aside.
  4. Place vinegar and honey in a saucepan and cook for 3-4 minutes or until honey melts and mixture is hot.
  5. Pour vinegar mixture over ginger and toss to coat.
  6. Cover and store in the refrigerator.
  7. Leave for 2-3 days before using, then as a required.

Makes 1 cup or 250 ml
