Method :
- Place flour and wholemeal flour in
a food processor and process to sift.
- Add 60 g butter and process until
mixture resembles coarse breadcrumbs.
- With machine running, add water
and process to form a dough.
- Turn dough onto a lightly floured
surface and knead for 5 minutes or until smooth.
- Set aside to stand for 5 minutes.
- Place mashed potato, cheese, curry
powder and cumin in a bowl and mix to combine.
- Divide dough into twelve equal
portions and press out each portion to form a 10 cm or 4" circle.
- Divide potato mixture between
dough circles and spread evenly over dough, leaving a border around
the edge.
- Fold dough circles in half to
enclose the filling, then carefully roll again to form a 10 cm or 4"
circle.
- Melt remaining butter in a large
frying pan and cook a few parathas at a time for 3-4 minutes each
side or until golden and cooked through.
