Spinach Curry Recipes

Ingredients :

60 g ghee or clarified butter

1 onion, finely chopped

2 cloves garlic crushed

2 small fresh red chilies, finely sliced

1 tsp grated fresh ginger

1 bunch or 500 g spinach, stalks removed and leaves shredded

freshly ground black pepper

Method :
  1. Melt ghee or butter in a frying pan, add onion, garlic, chilies and ginger and stir fry for 5 minutes or until onion is soft.
  2. Add spinach leaves, toss to coat with spices and cook for 4-5 minutes or until spinach begins to wilt.
  3. Season to taste with black pepper and serve immediately.

Serves 4
