Gazpacho Recipes

Ingredients :

1 garlic cloves, peeled

1.75 pints tomato juice

3 tbsp olive oil

2 tbsp lemon juice

1 tbsp lime juice

2 tsp sugar

5 oz cucumber, peeled and diced

3 oz mild red onion, chopped

5 oz red pepper, deseeded and diced

3 oz avocado, diced

2 tbsp chopped mixed herbs

salt and pepper

Method :
  1. Cut the garlic clove in half and rub the cut surfaces over the base and around the sides of a large mixing bowl. Discard the garlic.

  2. Pour the tomato juice into the bowl, add the olive oil, lemon and lime juices and sugar and season to taste with salt and pepper.

  3. Beat the mixture lightly until well combined.

  4. Cover the bowl with clingfilm and chill in the refrigerator for at least 60 minutes.

  5. Beat the soup again and stir in all the remaining ingredients.

  6. Place some ice cubes in individual serving bowls and pour the soup over the top.

  7. Sprinkle with coarsely crushed tortilla chips and serve with lime wedges.

Serves 6-8
