Minestrone Recipes

Ingredients :

45g dried haricot beans

45g dried kidney beans

2 tbsp water

2 onions, chopped

2 cloves garlic, crushed

2.5 liters water

2 potatoes, chopped

3 carrots, chopped

4 tomatoes, chopped

2 sticks of celery, chopped

3 courgettes, chopped

60g green beans, sliced

60g wholemeal macaroni

30g parsley, chopped

Method :
  1. Place haricot and kidney beans in a bowl and cover with cold water.
  2. Leave to soak overnight.
  3. In a saucepan, heat 2 tbsp of water and sauté the onion and garlic.
  4. Add water and soaked beans to the saucepan.
  5. Bring to the boil and rapidly for 10 minutes.
  6. Reduce heat, cover pan and simmer gently for 2 hours.
  7. Add all the vegetables.
  8. Bring to the boil.
  9. Reduce heat, cover and simmer gently for another hour.
  10. Stir occasionally.
  11. Add macaroni and bring soup to the boil 10-15 minutes before serving.
  12. Stir in parsley and serve the soup piping hot.

Tip - This classic and very nutritious soup looks after itself with a good long simmering period - leaving you free to get on with other things.

Serves 4 - 6
