Split Pea Soup Recipes

peas, washed
chicken
stock
onion,
chopped
whole
cloves (tied in muslin)
pepper
salt
chopped
parsley
lemon
juice |
Method :
- Soak the split peas overnight.
- The next morning put peas, stock
and onion in a saucepan then bring to the boil.
- Remove any scum from the surface.
- Add the cloves, pepper and salt.
- Cover and simmer for 11/2
hour or until the peas are soft and disintegrating.
- Take out the muslin bag and
squeeze the juices back into the soup.
- Blend the soup in the food
processor if you want a smooth purée, but personally we prefer the
textured soup.
- Sprinkle with parsley before
serving.
