Split Pea Soup Recipes

Ingredients :

315 g

split peas, washed

chicken stock

onion, chopped

whole cloves (tied in muslin)



chopped parsley

lemon juice

Method :
  1. Soak the split peas overnight.
  2. The next morning put peas, stock and onion in a saucepan then bring to the boil.
  3. Remove any scum from the surface.
  4. Add the cloves, pepper and salt.
  5. Cover and simmer for 11/2 hour or until the peas are soft and disintegrating.
  6. Take out the muslin bag and squeeze the juices back into the soup.
  7. Blend the soup in the food processor if you want a smooth purée, but personally we prefer the textured soup.
  8. Sprinkle with parsley before serving.

Serves 4 - 6
