Barley and Vegetable Curry Recipes
60 g butter
4 leeks, sliced
2 cloves garlic, crushed
2 tsp curry powder
1/2 tsp garam masala
300 g pearl barley
2 large potatoes, cut into 2 cm cubes
375 g pumpkin, cut into 2 cm cubes
4 cups or 1 liter vegetable stock or water
250 g broccoli, broken into florets
freshly ground black pepper
- Melt butter in a large saucepan,
add leeks and cook for 5 minutes or until soft.
- Stir in garlic and curry powder
and garam masala and cook, stirring for 1 minute longer.
- Add barley, potatoes, pumpkin and
stock or water and bring to the boil.
- Reduce heat, cover and simmer for

minutes longer or until barley and vegetables are tender.
