Barley and Vegetable Curry Recipes

Ingredients :

60 g butter

4 leeks, sliced

2 cloves garlic, crushed

2 tsp curry powder

1/2 tsp garam masala

300 g pearl barley

2 large potatoes, cut into 2 cm cubes

375 g pumpkin, cut into 2 cm cubes

4 cups or 1 liter vegetable stock or water

250 g broccoli, broken into florets

freshly ground black pepper

Method :
  1. Melt butter in a large saucepan, add leeks and cook for 5 minutes or until soft.
  2. Stir in garlic and curry powder and garam masala and cook, stirring for 1 minute longer.
  3. Add barley, potatoes, pumpkin and stock or water and bring to the boil.
  4. Reduce heat, cover and simmer for 15 minutes.
  5. Add broccoli and simmer for 10 minutes longer or until barley and vegetables are tender.

Serves 4 - 6
