Broad Beans Provencal Recipes

Ingredients :

450 g fresh or frozen broad or lima beans

30 g butter

10 ml Herbes de Provence

4 tomatoes, peeled, seeded and diced

salt and pepper

Method :
  1. Cook the broad or lima beans in boiling salted water until tender, about 8 minutes.
  2. Drain and refresh under cold water.
  3. Peel off outer skin if desired.
  4. Melt the butter and toss with the broad beans and Herbes de Provence.
  5. Heat through and add tomatoes, salt and pepper.
  6. Serve immediately.

Serves 4 - 6
