Broccoli with Anchovies Recipes

Ingredients :

75g pine nuts

1lg broccoli, divided into florets

50g butter

4 tbsp lemon juice

4 anchovy fillets, finely chopped

75g Parmesan cheese, freshly grated

salt and pepper

Method :
  1. Place the pine nuts in a heavy based frying pan and dry-fry over a moderate heat, stir, until golden all over, set aside.
  2. Steam the broccoli or plunge it into boiling water for 2 minutes, drain well, transfer to a bowl.
  3. Melt the butter in a small saucepan, add lemon juice and anchovies, heat until the butter foams.
  4. Pour the melted butter over the broccoli, sprinkle with salt and pepper and toss.
  5. Sprinkle the broccoli with the Parmesan and pine nuts.
  6. Ready to serve.

Serves 4
