Broccoli with Anchovies Recipes

Ingredients : |
75g pine nuts
1lg broccoli, divided into florets
50g butter
4 tbsp lemon juice
4 anchovy fillets, finely chopped
75g Parmesan cheese, freshly grated
salt and pepper |
Method :
- Place the pine nuts in a heavy
based frying pan and dry-fry over a moderate heat, stir, until
golden all over, set aside.
- Steam the broccoli or plunge it
into boiling water for 2 minutes, drain well, transfer to a bowl.
- Melt the butter in a small
saucepan, add lemon juice and anchovies, heat until the butter
foams.
- Pour the melted butter over the
broccoli, sprinkle with salt and pepper and toss.
- Sprinkle the broccoli with the
Parmesan and pine nuts.
- Ready to serve.
