Calamari With Vegetables Recipes

Ingredients :

baby calamari

oil

onion, chopped

small turnips, quartered

tomatoes, chopped

grated nutmeg

pepper

cayenne

water

spinach

parsley, chopped

Method :
  1. Ask the fishmonger to clean the calamari for you.
  2. Cut them into bite sized pieces.
  3. Heat the oil in the pan and add the onion.
  4. Cook until it is soft, then add the turnips, tomatoes, nutmeg, pepper, cayenne and water.
  5. Simmer for 15 minutes.
  6. Stir in the spinach and when it has wilted, add the calamari.
  7. The calamari will be ready as soon as it becomes opaque.
  8. Serve immediately.

Serves 4 - 6

An unusual combination of calamari, turnips, tomatoes and spinach from North Africa.
