Cinnamon Hearts Recipes

Ingredients :


440 g

6 tsp

220 g

2 tsp

345 g

egg whites

caster sugar

ground cinnamon

ground almonds

grated lemon zest

icing sugar

Method :
  1. Beat the egg whites with an electric mixer until they are light and frothy.
  2. Gradually add the sugar and cinnamon.
  3. Keep beating until the mixture is very stiff.
  4. Reserve half the mixture and to the other half add the almonds and lemon zest.
  5. Then work in the icing sugar, mixing well.
  6. Roll out the mixture to 3mm (1/8") thickness.
  7. Cut into heart shapes and brush the tops with the reserved mixture.
  8. Put onto well greased baking trays and place in a preheated oven (180C/350F/Gas 4) for 20 minutes or until golden brown.
  9. Remove from the oven and cool on wire racks.

Serves 4 - 6

If you don't have a heart shaped biscuit cutter, trace the above pattern. Bake them for St. Valentine's Day or for your lover's birthday dinner.
