Cucumber With Dill Sauce Recipes

Ingredients : |
1 large
cucumber, peeled in strips
180 ml
double cream
10 ml dill
seed
10 ml
chopped fresh dill
10 ml pink
berries, drained if canned
salt |
Method :
- Cut the cucumber in quarters,
lengthwise.
- Remove the seeds and cut each
quarter into 5cm or 2" pieces.
- Cook in boiling salted water for 2
minutes, drain and refresh under cold water.
- Leave to drain completely.
- When the cucumbers are dry,
combine the cream and dill seed in a small saucepan and bring to the
boil.
- Allow to cook rapidly to thicken
slightly.
- Strain and stir in the chopped
dill, pink berries and a pinch of salt.
- Combine with cucumbers.
- Serve immediately and do not
reheat.
