Cucumber With Dill Sauce Recipes

Ingredients :

1 large cucumber, peeled in strips

180 ml double cream

10 ml dill seed

10 ml chopped fresh dill

10 ml pink berries, drained if canned

salt

Method :
  1. Cut the cucumber in quarters, lengthwise.
  2. Remove the seeds and cut each quarter into 5cm or 2" pieces.
  3. Cook in boiling salted water for 2 minutes, drain and refresh under cold water.
  4. Leave to drain completely.
  5. When the cucumbers are dry, combine the cream and dill seed in a small saucepan and bring to the boil.
  6. Allow to cook rapidly to thicken slightly.
  7. Strain and stir in the chopped dill, pink berries and a pinch of salt.
  8. Combine with cucumbers.
  9. Serve immediately and do not reheat.

Serves 4 - 6
