Griddled Warm New Potatoes with Fresh Mint Dressing Recipes

Ingredients :

750g small new potatoes, halved lengthways

finely grated rind and juice of 2 limes

8 tbsp grape seed oil

2 tbsp chopped mint

sea salt and pepper

mint leaves, to garnish

Method :
  1. Heat a griddle pan.
  2. Place a layer of potato halves on the hot griddle and cook for 6 minutes on each side, reducing the heat as required.
  3. Remove the keep warm while cooking the remaining potatoes.
  4. Combine the lime rind and juice and the oil, beating well with a whisk.
  5. Add the chopped mint, salt and pepper, and whisk until evenly combined.
  6. Alternatively, place all the ingredients in a screw-top jar and shake well to combine.
  7. Toss the potatoes in the dressing, transfer to a warmed serving dish, garnish with mint leaves.
  8. Ready to serve.
