Griddled Warm New Potatoes with Fresh Mint Dressing Recipes

Ingredients : |
750g small new potatoes, halved lengthways
finely grated rind and juice of 2 limes
8 tbsp grape seed oil
2 tbsp chopped mint
sea salt and pepper
mint leaves, to garnish |
Method :
- Heat a griddle pan.
- Place a layer of potato halves on
the hot griddle and cook for 6 minutes on each side, reducing the
heat as required.
- Remove the keep warm while cooking
the remaining potatoes.
- Combine the lime rind and juice
and the oil, beating well with a whisk.
- Add the chopped mint, salt and
pepper, and whisk until evenly combined.
- Alternatively, place all the
ingredients in a screw-top jar and shake well to combine.
- Toss the potatoes in the dressing,
transfer to a warmed serving dish, garnish with mint leaves.
- Ready to serve.
