Mangetout or Pea Pods and Cauliflower With Ginger and Lemon Grass Recipes

Ingredients :

1 head cauliflower, broken into very small flowerets

225 g mangetout or pea pods, ends trimmed

45 ml oil

10 ml lemon juice

pinch sugar

salt and pepper

1 piece lemon grass, peeled and thinly sliced

1 small piece ginger, finely chopped

15 ml chopped parsley

Method :
  1. Cook cauliflower in boiling salted water for 1 minute.
  2. Add the mangetout or pea pods and cook further 1 minute.
  3. Drain and refresh under cold water.
  4. Leave to drain dry.
  5. Mix the dressing ingredients together and add the ginger.
  6. Peel the outer layers from the lemon grass and use just the inner core.
  7. Slice thinly or chop finely.
  8. Mix with the dressing.
  9. Add the parsley to the dressing and pour over the vegetables, tossing to coat well.
  10. Serve cold.

Serves 4 - 6
