Mediterranean Vegetables with Fresh Herbs Recipes

Ingredients : |
4 tbsp olive oil
1 garlic clove, crushed
3 large onions, sliced
3 large green peppers, cored, deseeded and
sliced
13 oz can tomatoes
3 tbsp chopped parsley
2 tbsp chopped basil
2 tbsp chopped thyme
1-2 tbsp capers
10-12 black olives, pitted
salt and pepper |
Method :
- Heat the oil in a pan, add the
garlic and onions, and fry very gently for 10 minutes, stirring
occasionally.
- Add the green peppers and cook
gently, stirring, for 1 minute.
- Add the tomatoes and their juice,
then the herbs, and season to taste with salt and pepper.
- Bring to the boil, then lower the
heat, cover and simmer for 30 minutes, stirring occasionally until
the vegetables are very soft.
- Remove from the heat.
- Stir in the capers and black
olives, then taste and adjust the seasoning.
- Serve warm, or chilled as a
starter.
