1 tbsp olive oil
1 medium yellow onion, diced
1 clove garlic, minced
1 cup chopped carrots
1/2 cup chopped celery
1 cup diced red potatoes, with the skins
on
1/2 tsp sea salt
1 tsp coarsely ground black pepper
1/2 tsp crushed red pepper flakes
4 cups vegetable stock
2 cups chopped green cabbage
1/2 cup cooked garbanzo or other beans |
Method :
Heat oil in
large pot and sauté onion and garlic until onion is translucent. Add
carrots, celery, potatoes, salt, black pepper, and red pepper, and cook
until potatoes are tender. Stir in stock, cabbage, and beans, and simmer
until cabbage is tender (about 7 minutes).
Serves 6-8
This hearty,
healthy stew uses the traditional combination of cabbage, potatoes and
carrots with lots of black and red pepper for a winning, one-dish meal.
