Spiced Carrots Recipes

garlic cloves, finely chopped

crushed cumin seeds

small dried chilies, chopped (optional)

carrots, cut into strips lengthwise

water

caster sugar

lemon juice

salt

Method :
  1. Carrots originally came from the Middle East, where they are treated in a very spicy and sweet fashion.
  2. In a large pan, heat the oil and sauté the garlic over a low heat for 1 minute.
  3. Add the cumin and chilies and the carrots and toss for several minutes to glaze the vegetables.
  4. Add the water, sugar and lemon juice and season with salt to taste.
  5. Cover the pan and cook over a medium heat until the carrots are just tender and the liquid absorbed.

Serves 6
