Spiced Cauliflower Recipes

Ingredients :

1 large cauliflower, washed and trimmed

Sauce :

15 g butter or margarine

15 g flour

2.5 ml mustard

1.25 ml nutmeg

280 ml milk

pinch mace

salt and pepper

45 g grated sharp cheese

additional nutmeg

Method :
  1. Place whole cauliflower in boiling salted water and cook, uncovered, for about 15 minutes.
  2. Drain well and keep warm.
  3. Melt the butter or margarine for the sauce and stir in the flour off the heat.
  4. Stir in the dry mustard and nutmeg and gradually add the milk.
  5. Add the pinch of mace and salt and pepper.
  6. Bring to the boil, stirring constantly until thick.
  7. Add the cheese and stir to melt.
  8. Coat the cauliflower with the sauce and sprinkle with additional nutmeg.
  9. Brown under a grill or broiler, if desired.

Serves 4 - 6
