Stuffed Tomatoes with French Lentils Recipes

Ingredients :

3 cups vegetable stock

1 cup dried lentils

1 cup chopped onions

1/4 cup chopped celery

1 tbsp minced garlic

6 tomatoes, peeled, seeded and hollowed out

1 bunch spinach, blanched and refreshed

white bean sauce

Method :

Preheat the oven to 350 degrees.

In a large saucepan, combine the vegetable stock, lentils, onions, celery, and garlic. Bring to a boil. Reduce the heat and simmer for 35 minutes, or until the lentils are just tender but not mushy. Set aside for 15 minutes.

Fill each hollowed-out tomato with the lentil stuffing and top with blanched spinach. Ladle the White Bean Sauce into a large nonstick baking dish and set the tomatoes on top. Bake, covered, at 350 degrees for 10 minutes, or until heated through.

Serves 6

Serve with a salad and some crusty bread for a delicious lunch or light dinner.
