Sunshine Carrots Recipes

Ingredients :

450 g carrots, peeled and sliced

5 ml light brown sugar

5 ml corn flour or cornstarch

1.25 ml salt

1.25 ml ground ginger

140 ml unsweetened orange juice

30 g butter

fresh ginger, peeled and shredded

Method :
  1. Place the carrots in cold, salted water, cover and bring to the boil.
  2. Cook about 15 minutes, drain well and keep warm.
  3. Combine all the remaining ingredients except the fresh ginger and butter in a small saucepan.
  4. Bring to the boil, stirring constantly until thickened.
  5. Beat in the butter and pour over the carrot in a serving dish.
  6. Sprinkle with the shredded fresh ginger.

Serves 4 - 6
