Tarragon and Lemon Vinegar Recipes

Ingredients :

570 ml or 2 cups white wine vinegar

whole sprigs of tarragon, washed and dried

peel of 1 lemon

Method :
  1. Heat half the vinegar to boiling point.
  2. Add the tarragon and lemon peel.
  3. Leave to cool and mix with remaining vinegar.
  4. Bottle, placing 1 tarragon sprig and a piece of lemon peel in each bottle.
  5. Seal tightly and leave for 2 weeks before using.

Serves 4 - 6
