Tomatoes With Orange and Tarragon Recipes

Ingredients :

450 g cherry tomatoes or 8 small tomatoes

zest and juice of 1 orange

10 ml chopped fresh tarragon

5 ml lemon juice

2.5 ml sugar

15 ml oil

salt and pepper

140 ml crème fraiche (thick soured cream)

small tarragon sprigs or whole leaves, garnish

Method :
  1. Place the tomatoes in a bowl and pour over boiling water to cover.
  2. Leave 20 seconds, drain and put immediately into cold water.
  3. Peel and remove the cores.
  4. Remove the zest from the orange in thin strips and set aside.
  5. Squeeze the juice and measure out 30 ml and combine with tarragon, lemon juice, sugar, oil, salt and pepper and whisk well.
  6. Gradually add the crème fraiche.
  7. Do not over whisk once the crème is added.
  8. If the sauce is too thick, add orange juice to thin slightly.
  9. Pour over the tomatoes and garnish with sprigs or tarragon or whole leaves and reserved orange zest.
  10. Serve chilled.
