Chicken Balls Recipes

Ingredients :

600g chicken breasts, skinned and minced

1 small clove garlic, crushed

1 egg

1 tsp mixed dried herbs or chopped fresh parsley

ground black pepper

1 tsp lemon juice

625ml tomato juice

Method :
  1. In a bowl, combine the chicken, garlic, egg, herbs, pepper and lemon juice.
  2. Mix well.
  3. Leave to stand for 10 minutes.
  4. With wet hands, form tbsp of the mixture into balls about the size of a walnut.
  5. In a saucepan, bring the tomato juice to the boil.
  6. Reduce to a simmer.
  7. One by one, drop the chicken balls into the tomato juice and simmer for 20 minutes.
  8. Use a slotted spoon to remove the chicken balls from the tomato juice.
  9. By this stage, the juice should have reduced and thickened to the consistency of a sauce.
  10. If not, simmer the sauce for a little longer.

Great snack food and an excellent alternative to beef hamburgers. Chicken balls keep well in the refrigerator and can be frozen.
