If you don't want to clean a roasting rack,
place six 3/4-inch thick slices of peeled onion on the foil in the bottom of the
roasting pan. Perch the chicken on this makeshift roasting rack. It won't
elevate it as well as a real rack for truly crispy skin, but when you're done,
you'll have some greasy-but good roast onion and a clean pan, once you've
discarded the foil.
