piece stick cinnamon

cardamoms

nutmeg

 

medium sized onion

ginger

cashew nuts

chili powder

aniseed

turmeric

medium sized chicken, cut into 6 pieces

bunch coriander leaves

spray mint leaves

medium sized onions, thinly sliced

screw pine leaves

rice, half cooked

ghee

tomato puree

Method :
  1. In a large pan, put in the ghee and fry the onions lightly.

  2. Add the ground spices, A.

  3. Fry for a couple of minutes and then add the tomatoes, chilies, pandan, mint and coriander leaves.

  4. Fry for a few minutes and then put in the ground spices, B.

  5. Fry for five minutes or until well-browned and then add the chicken and lower the heat.

  6. Add the spices, C and the tomato puree and mix slowly.

  7. When the chicken is cooked, add the half-cooked rice and lower the heat to a maximum.

  8. Cover with a couple of clean dish cloths and cook until the rice is well-done.

  9. Serve immediately with curries or dhall and vegetables.
