Chicken Braised with Ginger and Star Anise Recipes
Ingredients :
1 tsp
Sichuan peppercorns
2 tbsp
peanut oil
3cm x 2cm
fresh ginger, julienned
2 cloves
garlic, chopped
1kg
chicken thigh fillets, cut in half
80ml
Chinese rice wine
1 tbsp
honey
60ml light
soy sauce
1 star
anise
Method :
Heat a wok over medium heat, add
the peppercorns and cook, stirring to prevent burning, for 2-4
minutes, or until fragrant.
Remove and lightly crush with the
back of a knife.
Reheat the wok, add the oil and
swirl to coat.
Add the ginger and garlic, cook
over low heat for 1-2 minutes, or until slightly golden.
Add the chicken, increase the heat
to medium and cook for 3 minutes, or until browned all over.
Add the peppercorns, wine, honey,
soy sauce and star anise to the wok, reduce the heat to low and
simmer, covered, for 20 minutes, or until the chicken is tender.
Divide among four plates and serve
with steamed rice.
