Chicken Drumsticks In Honey and Coriander Crust Recipes

Ingredients :

8 chicken drumsticks

3/4 cup butter

2 tbsp sunflower oil

5 tbsp clear honey

1 tbsp Dijon mustard

1 tsp roughly crushed coriander seeds

1 tsp freshly ground black pepper

4 cups breadcrumbs

coriander sprigs, to garnish

Method :
  1. Preheat the broiler and broil the chicken for 6 minutes, turning several times.
  2. Place the butter, oil and honey in a small pan and warm until all three ingredients are combined.
  3. Preheat the oven to 350F.
  4. Add the mustard, coriander and pepper to the mixture.
  5. Stir well and brush on to the chicken.
  6. Roll the drumsticks in the breadcrumbs.
  7. Bake in the oven for 20-25 minutes until fully cooked through.
  8. When cooked, the juices should run clear.
  9. Serve garnished with a sprig of coriander.

This delicious crunchy coating will be a hit with guests and family alike.
